I haven’t been proud of what I’ve been eating lately and decided I need to clean up and do better.
One of the first recipes I came across has changed my world view. Oatmeal, that you soak in milk overnight. You don’t even need to cook it. Genius!
I’ve never really liked oatmeal. But topped with strawberries and a bit of maple syrup it’s delicious.
Here’s all there is to it:
- 3/4 cup of milk and 3/4 cup of old fashioned oats placed in the refrigerator in the evening. I’ve read you could add some greek yogurt for more creaminess, but I used whole milk and it’s plenty.
- The next morning I warm it up a bit in the microwave and add slices of fruit and a drizzle of maple syrup.
